Delicious Hanukkah Cheese Latkes

Ingredients
- 3 eggs
- 1 cup milk
- 1 cup cottage cheese, drained
- 1 and 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 5 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup oil for frying
Instructions
- Get a large mixing bowl and mix all of the ingredients together except the oil. Mix until smooth.
- Heat 1/2 cup oil in a skillet or frying pan.
- Using a large spoon, drop pancake like amount of the cheese potato batter into hot oil.
- Fry 2 to 3 minutes on each side, until lightly golden browned.
- Continue until batter is used up, adding oil only when necessary.
- Place fresh latkes onto paper towels and let them drip dry / drain the excess oil.
- The latkes may be served alone as is, topped with sour cream or traditional applesauce. Enjoy!
